This is my family's favorite Zucchini recipe for Fall...Oh so good...Hubby was talking about it yesterday...On my way to the store to get Zucchini...I know. I wish i had a garden. They grow pretty well...
pineapple zucchini bread:
3 eggs 1c oil
2c sugar
2t. vanilla
2c grated zucchini
1 can crushed pineapple, drained
3 c flour
2t soda
1t salt
1/2t baking powder
1 1/2t ground nutmeg
1c chopped walnuts
With a mixer, beat eggs, sugar, vanilla and oil until thick and foamy. Add the rest of ingredients in mixer on low. Grease loaf pans then flour them. Makes 2 5x9" loafs. Bake 350* for 45 minutes.

I use to grow zucchini until the black snakes started invading the garden, it just wasn't worth the hassle of dealing w/snakes...

I just made your Zucchini Bread! It is in the oven right now! I substituted brown sugar for the sugar. I can't wait!

This looks like a great recipe! I love zucchini bread. we have to eat dairy/wheat/egg/soy free, but I might try and make this work!
