Pumpkin owl cupcakes: fun kid treat

Fun pumpkin cupcake treat for kids. They love to help assemble their own and love to eat it. Perfect treat for Fall and Halloween.  I wanted to use one of my Pumpkin recipes and make a fun cupcake for the kids. I have seen this owl with reeces candy but I don't like them so I used M&Ms. Hope you enjoy my personal Pumpkin cupcake recipe! Happy Fall and Halloween!

Isabelle Thornton's Pumpkin cupcake owl recipe

Cupcake:

1 and cup flour,
1/4 cup whole wheat flour,
1/2 cup brown sugar 
2 tsp baking powder,
1/2 tsp baking soda,
1 tsp Pumpkin pie spice,
Pinch of salt,
1 small can Pumpkin puree,
2 eggs,
1 cup sour cream
1/4 cup coconut oil,
1 cup miniature semi sweet chocolate chips ( perfect for the size of the cupcake and small kids. It makes it less messy too)

Preheat the oven to 375*. Line a cupcake pan with cupcake liners.

In a large bowl, whisk both flour, brown sugar, baking powder, baking soda, salt and Pumpkin spice. In a medium bowl whisk pumpkin, eggs, sour cream. Melt coconut oil in a bowl in the microwave. Let cool then add to the wet mixture.
Stir Pumpkin mixture into flour mixture. when well mixed add thechocolate chips.

Fill cupcake liners 1/3 with the mixture. Cook for 12 minutes or until a toothpick comes out dry when inserted in the middle of the cupcakes.
Let cool completely on a rack or platter.

Owl topping:
1 box oreo cookies. (2 Oreo cookies per cupcakes),
Chocolate icing of choice. ( I bought mine)
Colored M&Ms. ( only use the orange and brown colors)

Frost your cooled cupcakes with chocolate frosting.
Separate the oreos by twisting and pushing on the cookies before separating them. Only use the side with the cream on the cookie.
Place them on each side of cupcake as to make big eyes. Place one brown candy in the middle of each eyes and one orange in the middle of the 2 eyes to make a beak.

Enjoy!! My kiddos LOVE them!!

Tu es vraiment douée pour les gâteaux ! J'étais comme toi avant, quand je vous faisais des gâteaux, j'aimais ça. Les missionnaires disaient qu'ils n'avaient jamais mangé de gâteaux aussi bons ! Joyeux Halloween !
