Day 8, Valentine countdown. French Madeleine recipe.

This was my Elementary school. College Montpezat de Sens. It was an old women monastery turned into a school. All the bottom windows had bars still. Sens is in the South of Paris, about 3 hours away. In the country. I lived there from age 7 till 13. I had my first cooking class there, We made Madeleines.
Madeleine:

  1. 1/4 cups flour
  2. 1 tsp baking flour
  3. 2 eggs
  4. 3/4 cups confectioner's sugar, more for dusting
  5. 1 tsp orange tree flower extract or Strawberry
  6. 6 tbsp unsalted butter, melted an cooled

In bowl beat with electric mixer until smooth and light, eggs and sugar. Add extract.
Sift the flower and baking powder, add to egg mixture. Beat everything.
Butter and sift flour on Madeleine mold. It has a shell designs on them.
In oven 375 F. Until starting to get slightly gold on the sides
Powder sugar...

    Madeline is it? Correct me if I'm wrong. But they look so delicious! And the goody bag looks so cute.

  6. They are called Madeleine, with a "ei". It is a French classic. I got my tray at Williams Sonoma years ago.
    I am sure you can find it on line. My Mom made those all the time too. I must have been 8 when i made it in cooking class.

  8. I think I have a madeline mold somewhere, but have NEVER used it. Now I have a recipe I shall have to give it a go.

  13. What a pretty school. I went to an old Catholic school with a convent, but I'm sure it is not as old as that.

    Wow those look delicious. I did not know they were made with a mold.
